Chocolate Dipped Frozen Bananas
I refuse to give up dessert. Why should I? I love it! But what I don’t love is how the typical, sugar-laden desserts make my thighs thicker, my ass expand, and my complexion less than stellar. Uggh! So I go to great lengths to develop healthy, guilt-free desserts that are waistline friendly. Hooray! And this is one of my all-time faves…chocolate-dipped bananas. Yum!
4-6 ripe bananas
wooden popsicle sticks
1 bag organic dark chocolate baking chips (60% cacao or higher)
1/8 cup coconut oil
1/4 cup unsweetened cacao powder
2 cups finely chopped peanuts
*Peel bananas and cut in half
*Insert wooden popsicle stick into banana, place on waxed paper and freeze for at least 20 minutes.
*Place the dark chocolate baking chips and the coconut oil in a microwave-safe, glass bowl.
*Microwave for 30 seconds on high. Stir. Add cacao powder. Return to microwave for 30 more seconds.
*Whisk until all chocolate is melted and smooth.
*Dip frozen bananas in chocolate, roll in peanuts, and place on waxed paper.
*Once chocolate is solid, wrap each banana in plastic wrap and store in the freezer.
(peanut butter option- before inserting the popsicle stick, slice the banana halves lengthwise, add a tablespoon of peanut butter and then insert the popsicle stick between the two halves)
These frozen bananas are my favorite new late-night snack. They satisfy my sweet-tooth without sabotaging my diet. And guess what? You will be shocked at how easy they are to make. Easy, Healthy, Guilt-free… Now that is a really good way to “Live Young.”
